Cheesy Broccoli Potato Soup 4T b*tter 1c onion chopped 1/2c flour 4c low sodium chicken broth 4c fat free milk 16oz. Frozen broccoli chopped 2c potatoes peeled & diced 1 1/2c cheddar cheese, shredded 1T worchestershire sauce 1t. Salt 1/2 t. Pepper Melt b*tter in large saucepan over medium heat; add onion & cook til tender. Add flour; stir until blended. Gradually stir in broth. heat til slightly thickened. Add milk, broccoli, potatoes. Cover & cook |

My Egg Drop Soup 4 cups chicken broth 1/2c water chestnuts finely chopped 3 eggs beaten 1/4t black pepper Bring chicken Stock to boil. Add water chestnuts and simmer for 4 min. Add beaten eggs slowly while gently stirring soup. Add black pepper stir through once. Serves 6 Enjoy |

Chicken Noodle Soup Serves 6 INGREDIENTS: 600g chicken thigh fillets - 4 cups (1 litre) salt-reduced liquid chicken stock - 1 cup water - 1 garlic clove, crushed - 2 teaspoons grated ginger - 125g thin spaghetti - 1 x 310g can sweet corn kernels - 1 cup fresh milk - 4 shallots, sliced |

Trim excess fat from thigh fillets and slice into thin strips. Heat the stock and water in a medium pan with garlic and ginger, until boiling.

Break spaghetti into short pieces (about 8cm long) and drop into stock. Stir and cook for 2 minutes. Add chicken strips and cook for a further 5 minutes.

Meanwhile, process corn kernels with the milk until roughly chopped. Add to saucepan with half the shallots and heat gently until warmed through. Spoon into bowls and sprinkle with remaining shallots.

* Also, you could use instant noodles instead of the spaghetti or, use coconut milk with a dash of soy sauce for an asian version. Or add some chopped chilli to make it spicy.
