Medkit: You can buy snacks at a convenience store, and then save them. To eat snacks hold back / select to open up your menu, scroll down to Action and then select a snack, then press A (360) or X (PS3) to recover some of your health. (You can also press both the controller sticks together to eat a snack and heal quickly after selecting it in your interaction menu.)

Racing speed boost: If you hit gas right at the start of a race (when it says Go), you will get a small speed boost....note.. I use this tip... I learned this playing Mario Kart...
