Ruminants, fish with scales and fins, birds that arnt water fowl or birds of pray are supposed to be clean. Everything else is 'unclean' not fit for human consumption. Which of course is contradicted by ''Every moving thing that liveth shall be meat for you; even as the green herb have I given you all things. Gen 9.3
