My chilli con carne is pretty outstanding. I prefer curries at a medium heat, so they're more about flavour than setting your face alight. I might make a slow cooked lamb rogan josh next week  about 8 hours in the Rayburn on its lowest setting, fu*king lovely.

Som tum in Thailand (papaya salad) I can eat very spicy food but that stuff is so intense, can even give u blisters in your mouth. Last febuary i was there and it was my mates last night and we got some food to eat in a bar, a Thai girl got some papaya salad, i ate it with her but struggled, my mate couldn't go near it.
