Classical guitarists like Ana Vidovic or Segovia make the usual who's who of guitar legends look like amateur hour on a technical level, the jazz guitarists of old are pretty amazing too. I like me a bit of Satriani, B.B King, John Williams, Lead Belly, Skip James. Or just listening to Voice of the Soul by Death, where you can practically hear the guitar weeping.
