It also allows room on the plate for chips/beans/salad etc. Also, if you cover it in grated cheese just before folding it in half, you get a lovely gooey melted cheese middle that oozes out when you cut into it. |

one of my most favorite meals in the cafe is ham and cheese omeltte chips and beans with 2 slices of bread and butter. Love an omlette butty

@ tranie - 14.06.15 - 11:44am beat 3 eggs add a dash of milk and pepper, do not add salt yet get your pan really really hot, add a kn*b of butter then add the eggs. The outside of the omlette should begin to cook, gather this up in to the center until all your egg has cooked. Then add any fillings ham cheese bacon etc. fold the omelette in half and serve with 2 pieces of bread and butter Spot on. I like mine with chips and salad. |

I was thinking about cooking some mushrooms and tomato first and then pouring in the egg around it, would that work or not, or would I end up with scramble again. lol

I always cook one half add the filling to the uncooked part then fold the cooked part on top of the uncooked part...and I use 5 eggs and add milk to bind it

I just crack an egg, add miilk and butter then swish it around in the pan then put it on toast
