Unless of course that wasn't his head but that of his son. His hair by the time of his death had gone completely grey and he used to blacken it with boot polish. The hair on the head that was taken as a trophy and warning reminder stayed black.

Well he didn't fight them by himself really. He was the head of the Order of the Dragon which was the Vatican funded military response to The Ottomans. A papal decree by The Rope to fight a holy war brings you a massive number of men. As Urban 2nd found out in 1096 with The First Crusade.
