MANGO ICE CREAM ![]() wot u need... 425g mango pulp 3tbs clear honey 600ml dbl cream 50g ground almonds 4 egg whites mint leaves to garnish METHOD... Gentaly heat the mango pulp & stir in the honey until melted. remove frm heat n mix in the cream & ground almonds set aside 2 cool. pour the mixture into a freezer container & place in the freezer fr abt 4 hrz or until it begins 2 solidify. turn out mixture into a bowl and break it up with a fork. whisk the eggs in a bowl until stiff n gently fold thm into the mixture return 2 freezer n freeze 4 another 4hrz till solid garnish n serve |

Ingredients: Coconut pulp, must be frm 4 young coconuts 1/2 kilo seedless grapes (red n green) 2 apples 8 bananas 3 large sweet ripe mangoes 1 cup chilled tbl cream 1 cup chilled sweetend condensed milk Cut the buko pulp into thin strips. Peel the apples n cut into dice. Peel n cut the bananas into cirlces. Slice the mangoes by cutting it from both sides n make crisscross patterns on each n scoop out the pulp with a spoon. Rinse n drain the grapes. Then Whip together the cream and condensed milk. Combine everything in a large bowl n mix thoroughly. Chill for at least 30minutes n serve. |

ACHARI MUTTON wot u need 1/2 cup corriander chopped 1/2 tsp fengureek seeds 1 tsp fennel seeds 800 gms mutton 1tsp turmeric powder 8 red chillies 1 tsp chilli powder 4 med tomatoes 5 cloves 1 tsp onion seeds 7 tbs mustard oil 2 tbs ginger chopped 1 tbs garlic chopped 1 tsp mustard seeds 4 onions salt to taste |

METHOD... ACHARI MUTTON * wash n cut mutton into cubes * chop onion n tomatoes * roast whole spices & grind coarsley * heat oil in pan n stir fry onion until brown * add ginger n garlic mix in coarsley ground spices stir fry for 1/2 min * mix in mutton, stir fry on high flame until mutton is well brown * add tomatoes, turmeric, red chilli powder n salt mix well * stir fry till oil seperates * mix in 2 1/2 cups of water bring to boil cover n cook until mutton is fully done * garnish with coriander leaves n serve |

BEEF CALDERETA Ingredients: *2pounds beef chopped into cubes *1/4 cup vinegar *1/4 cup soy sauce *3 tbl spoons cooking oil * 2 pcs onion chopped *1 bell pepper chopped * 1/4 cup minced garlic * 2 cups tomatoe sauce * 2 cups water * 2 cups potatoes peeled n sliced into cubes * 1 cup green peas * salt and pepper to taste |

* Mix the beef, vinegar, soy sauce and garlic together in a large bowl. Marinate, refrigerated, for anywhere from 1-8 hours. Remove the meat from the marinade and pat dry, reserving the marinade. * Heat the oil over medium-high flame in a large pot. Brown the beef in batches, removing it to a plate or bowl. * When the beef is all browned, add more oil to the pot if needed and saut the onions, peppers and garlic over medium flame until the onions are translucent. Add the tomato sauce and simmer for 3-5 minutes to cook down somewhat. |

* Return the beef to the pot, along with the reserved marinade and the stock or water. Bring to a boil, then reduce heat to medium-low and simmer, covered, for about 30-40 minutes. * Stir in the potatoes, peas, salt and pepper and simmer for another 20-30 minutes, or until the beef is tender and the potatoes are cooked through. Add a little more water if necessary. * Adjust seasonings to taste and serve hot over rice. |

Caldereta is also a very common filipino dish n also one of my favorite. You may also replace beef with goat meat or chicken :). U may also make it a little spicy depending on desired taste..Hope u enjoy this filipino dish too :)
