Spanish Garlic Shrimp Ingredients: 1 & 1/2 tablespoon b*tter 1 tbs polysaturated oil 8 cloves garlic, crushed 6 green spring onions, chopped 1 small red chili, seeded and chopped 420g / 14oz canned tomatoes, undrained and mashed 1 kg / 2 lbs. Shrimp, shelled and deveined, with tails left intact Method 1) heat b*tter and oil in a frying pan. Cook garlic, unions and chili for 1 - 2 minutes. Stir in tomatoes and cook over medium heat until boiling. 2)Divide shrimp between 4 individual ovenproof dishes. Spoon tomato mixture over and bake in a pre heated oven at 200'C or 400'F for 10 to 15 minutes or until shrimp turn pink. Tip: A gourmet delight made lighter and healthier for today. Garlic shrimp are usually cooked and served n lots of b*tter and oil. To reduce fat, cook them in jz a little b*tter and 1 tbs of oil. Enjoy |

~SALSA VERDE~ Ingredients: 2 cloves garlic, crushed 2 tbs capers 2/3 pcs pickled gherkins (d 1 in sweet vinegar) 6 pcs anchovy fillets 2 large handful of flat leaf parsley 1 bunch of fresh basel, picked 1 handful of fresh mint, picked 1 tbs Dijon mustard 3 tbs red wine vinegar 8 tbs virgin olive oil salt to taste and freshly ground black pepper Procedure Finely chopped d ingredients. Put d mixture into a big bowl and add d mustard and red wine vinegar. Slowly stir the olive oil until u achieve d consistency u are looking for and balance d flavor with d salt and fresly ground black pepper |

ROAST CHICKEN WITH SALSA VERDE.. 1 whole large/small dressed chicken (it depends on how many person eat) Washed d chicken and pat it dry with a kitchen towel paper. Flip up d skin of d chicken carefully don't tear them apart and stuffed it with salsa verde, scattered evenly. Jz n d tummy,legs and back of d chicken. And slowly put it back d skin. Dash some ground black pepper and salt inside the tummy and stuffed it with 3 pcs dry leaves of bay leaves, 2/3 twigs of rosemary and 1 lemon. Use fork 2 make holes on d skin of d lemon. Dnt 4get to tie d legs of d chicken with a string, so dat it can't walk jz kidding so dat d stuffed won't come out. Bake on a pre-heated oven at 200 deg.for 1 hrs (30 mins both sides or it depends how big is ur chicken). Turn ur chicken occasionally. Tips: U can put some sliced potato or new potato at d side of d chicken, dis wil serve as ur side dish . |

Avocado and Chicken Burritos serves 4 INGREDIENTS: 4 small chicken - 1 tbspoon olive oil - 4 tortillas - 1 cup reduced fat sour cream or natural yoghurt - 1 220g jar of salsa - 8 large lettuce leaves - 1 large red onion, cut into wedges - 1 red capsicum, seeds removed and finely sliced - 2 Avocados sliced PREPARATION: *Heat olive oil in a large frying pan and cook chicken for 5 minutes each side. *Remove chicken and slice. *Warm tortillas according to packet instructions. *Smooth a quarter of sour cream and salsa over each tortilla and top with lettuce, chicken, onion, capsic*m and Avocado. *Roll and serve. |
