Recipes Home : Rice: KesarPulao (Saffron Rice)KESAR PULAOIngredients:1cup long grain (basmati) Rice1cup Sugar (or according totaste)3-4 Cardamom (green elaichi,split & crushed)Few strands of Saffron (kesar)4 cloves11/2 tbsp Mixed Dry fruits(Pista, cashewnut,almond)chopped1tsp Raisinsa Pinch of saffron (kesar)colordissolved in 2tsp warm water2 tbsp pure ghee1 tbsp mustard seedssilver paper (varak)Water for boiling rice.How to make kesar (saffron)rice:Wash soak and drain rice.Bring water to boil and addthe rice and simmer theflame.When rice is half done addsugar (dissolved in little water)and ghee.When fully done add thesaffron, cardamom, cloves andhalf of the dry fruit.Stir gently and cover for 10minutes.Garnish it with remaining dryfruit and silver paper.Serve the kesar pulao freshand hot.
